Indian flat bread - Soft, healthy, fluffy phulkas
Making rotis/phulkas is not a rocket science. There were days when my rotis used to be really hard like cardboard :-(. Slowly learnt this making phulka which is really easy and can be made with little effort. With absolutely NIL oil this is a very healthy dinner option along with a simple dhal. You can prepare the dough even a day before and refrigerate in an air-tight container. Defrost the dough an hour before making rotis. If you are using a hotpack to store the rotis make sure to layer the bottom with soft cotton cloth or tissue paper. Roll the rotis first (10/12), then cook them altogether and while storing cover the hot-pack immediately. This makes the rotis stay softer for longer.

Ragi to Riches
Given that many of my friends who were born in the year I did, face
another decade-birthday this year, leaving me way behind at 26, I seem
to be more and more interested in "health" food. This, however, is not
new to me. I have always surfed the sine wave, with a few days of
uber-virtuous living, alternating with spongecake-samosa- chocolate
binging, which the body has been taking pretty well thus far. My
rapidly aging erstwhile classmates, held in the throngs of midlife
crisis, are now passing their metabolic problems to me, believing that
THAT's what friends are for, and so the body, in particular the stomach
area, complains whenever there is as much as a whiff of culinary sin in
the zip code. By stomach, I mean the area extending from a few feet in
front of the face to the toilet bowl, so that at the sight of the
doughnut which usually makes the tongue drip, there is an automated
voice that tells the brain that a single sniff of that thing resulted in
some interesting fluid dynamics in the bathroom last time. The voice
is hyperactive these days, correlating coffee with the duodenal balloon
that that fills up with sulfurated air that often finds exit at the
most inopportune moments, ice cream to the cushion at the seat area,
bhajji to the aqua regia along the entire plumbing route and so on.

Bottle gourd in curd (Surakkai Thayirpachadi)
Bottle gourd is one of the primary vegetables referred for diabetic patients. This has very low calorific value and helps in cooling the body. Try to include this at least once a week in your menu. I will try to post more recipes with bottle gourd which are healthy and easy to make.

Oats Dosai
Oats is a very healthy diet option for diabetic patients and people who are constantly watching their weight. It has been scientifically proven that oats can REDUCE bad cholesterol. It is high in fiber, and so is digested slowly - meaning, there is a slower release of glucose into the blood stream, making it an excellent meal for diabetics. Oats is rich in phytoestrogen compounds that are very good for women - it guards against fibroids, breast cancer and pms symptoms. Oats is also, the only cereal that has protein - unlike our daily Indian staple of rice and wheat which have negligible amounts of protein.
I wanted a recipe which serves as as a whole meal like Oats porridge, but more "Indian". Hence the dosa (pancake).
