Rajma Curry with Herb Rice





Ingredients


For the Rajma

Rajma(Red kidney beans) - 2 cups(approx. 200 gms)
(soak overnight/8 hours)
Onion - 1 chopped finely
Tomato- 3 medium- make a puree
Fresh Cream- 2 tablespoons
Oil - 2 tablespoons
Potato- boiled and cut in to cubes (approx. 2 medium sized potatoes)
Carrot - 2- boiled and cut into cubes

Dry masalas


Red chilly powder - 1 teaspoon
Turmeric powder - 1 teaspoon
Rajma masala or channa masala - 2 teaspoons
salt to taste


For garnishing

Onion - 1  chopped like lotus petals
Fry the onions in a high flame until they are transparent. Onions should not be fully fried as you want to retain the crispiness.
Coriander leaves
(if you like you can chop green/red capsicums)

Procedure
1. Pressure cook the kidney beans with salt. Don't throw away the water as we need that for the gravy.
2.In a kadai, add 2 tablespoons of oil. Season it with Cumin seeds. Once it splutters add the finely chopped onions.

3. Once the onions are golden brown in colour, add the fresh tomato puree and the dry masalas.

4. Simmer and cook for 7-8 minutes or until the oil separates from the gravy.

5. Then add the boiled kidney beans and the potato, carrot cubes.
6. Keep it high flame until it starts boiling.
7.Simmer and cook for 15 minutes.

8. Then add the fresh cream.Mix well.

9.Garnish it with fried onions and coriander.


Now for the Herb rice

This is very simple. This can be done with left over rice too. The flavour and taste is only from butter and fresh herbs.

Ingredients


Basmati rice - 2 cups
Fresh coriander, basil and oregano leaves - 1 cup - chopped finely
butter - 2 tablespoons

Procedure
1. Wash and soak the basmati rice for half an hour.
2. Cook in boiling water. Add salt for the rice in the boiling water itself.Once it's cooked drain the water completely in a colander and add some ice cubes. This is to ensure that rice doesn't stick to each other.
3. In a pan, add 2 tablespoons of butter. Once it melts add the herbs. Saute for few seconds and add the already cooked rice.
4. Serve it with rajma curry
