Moong dhal Vegetable kichdi


If you want to prepare a nutritious and wholesome meal  for kids, I would recommend this dish.It was delicious and my daughter absolutely loved it. We are going to use Rice and dhal just like Pongal,  but the consistency is going to be like Porridge. It can be prepared with Tuar dhal or Masoor dhal too. Whatever measure I have given serves 2 people, so adjust your measures accordingly. If you want the dish to be spicy, add dried red chillies along with green chillies, also you can increase the chilly powder ratio. I have made it a little bland.



Ingredients
Raw rice/Boiled rice - 1/2 cup(wash the dhal and rice and keep it aside)
Moong dhal/Masoor dhal/Tuar dhal - 1/2 cup
Water - 4 cups(Use the same cup which was used to measure rice and dhal)
Mixed vegetables like Potato, cauliflower, carrot, beans, onion, tomato, peas - chopped into big pieces
Ginger paste - 1/2 teaspoon
Green chilly -1 or 2
Turmeric - 1/2 teaspoon
Red chilly powder - 1/2 teaspoon
Oil for cooking - 2 tablespoons
salt to taste

For seasoning
Cumin seeds

For garnishing
Ghee - 1 tablespoon
Coriander leaves


Procedure
1. In a pressure pan or cooker, heat 2 tablespoons of oil. Season it with cumin. Add the green chilly.Saute for a minute. Add the moong dhal. Saute until the dhal is golden brown in colour.
 2. Add the onions. Saute for a minute or two. Then add the ginger paste. Cook until the raw smell of the ginger goes.
3. Now comes the turn of vegetables, washed rice and dry masalas. Saute for 3-4 minutes until the rice is loses its moisture.



4. Mix 4 cups of water and salt. Close the lid with the whistle..You needn't wait for steam. Cook for 4/5 whistles.Take it out once the pressure cools down.


5. Transfer this to a serving bowl. Garish it with a tablespoon of ghee and fresh coriander leaves.
