Potato masala for Poori

Ingredients
Potato - 5-6 medium sized ones
Onion - 2 medium size
Tomato - 1 small
Green chillies - 4/5 split into two
Ginger grated - 1 teaspoon
salt to taste
curry leaves and coriander leaves
For seasoning
Oil - 2 teaspoons
Mustard seeds - 1 teaspoons
Channa dhal - 1 tabelspoon
Asafoetida 1/2 teaspoon



Procedure
1. Boil the potatoes, peel it and mash it. While mashing leave some  pieces of potatoes as cubes. No need to mash it completely.
2. In a kadai, add 2 teaspoons of oil. Season it mustard seeds, channa dhal, asafoetida and curry leaves.Add the green chillies. Saute for a minute and add the onions.
3. Saute until the onions become transparent and add the tomatoes. Cook until the tomatoes are soft and tender.
4. Now add the mashed potatoes with 2 cups of water. Add necessary salt.
 5. You can see that potato has absorbed the water and gravy has thickened well. Add the grated ginger. Mix and boil for a minute.
6. Garnish it with coriander leaves and serve it with hot Pooris.
