Peas Pulao

Peas pulao can be made in different ways.This one I found to be simple and tasty which can be served with Raitha or a Potato curry/Paneer curry.
Ingredients
Basmati rice-1 cup
Water-2cups
Onion-1 medium-chopped into thin slices
Frozen peas or fresh peas-1/2 cup
Mint leaves-one handful
Green chilly-2 slit into half
Ginger-1 inch
Garlic-5-6 cloves(grind these two to a coarse paste)
Cardomom,cloves,cinnamon-one each


Soak the Basmati rice for half an hour. It makes a lot of difference in texture and keeps the grain separated after cooking. 
Procedure

1.In a cooker add a tablespoon of oil and a tablespoon of ghee.Season it with cloves,cardamom, cinnamon,green chillies.
2.Add the mint leaves, after a minute add ginger/garlic paste.Simmer it for 2 minutes.Drain the water from basmati rice and add it to the cooker.
3.Simmer and continously stir for 3-4 minutes.Wait until the moisture from the rice is completely absorbed and a golden yellow colour is attained.Add 2 cups of water and salt.Close the lid and allow 2 whistles.
PS: If you are cooking more than 2 cups of rice just one whistle is enough. 
4.By the time pressure is released from the cooker, we will fry the onion and peas.In a pan add oil, cook the onion with a bit of salt.Add peas when onion is half done.Simmer and stir until onion is in golden brown colour and also crispy.

5.In a serving bowl transfer the cooked basmati rice and add the fried onion/peas mixture on top.Don't mix the rice when it's hot as rice will be mashed and you will lose the pulao texture.Wait until it cools down to mix and serve.


PS: You can fry the cinnamon, cardamom and cloves in ghee and make a powder and add it to the onion/peas mixture.This flavour will be unique and out of the world.
