Bottle gourd in curd (Surakkai Thayirpachadi)

Bottle gourd is one of the primary vegetables referred for diabetic patients. This has very low calorific value and helps in cooling the body. Try to include this at least once a week in your menu. I will  try to post more recipes with bottle gourd which are healthy and easy to make.


Ingredients
Bottlegourd(Lauki/Suraikkai in tamil)- grated one cup
Curd- 1/2 -1 cup


For seasoning
Mustard -1 teaspoon
Urad dhal -1/2 teaspoon
Coriander- chopped finely
Green chillies-1 or 2 chopped finely
Asafoetida
salt to taste



Procedure
1. In a kadai cook the grated bottle gourd  along with salt until the water content of the vegetable is absorbed. It should not take more than 5-7 minutes.


2. Now comes the seasoning part. In a kadai add a teaspoon of oil, add mustard, urad dhal, green chillies and asafoetida.
3. Transfer the Bottle gourd to a vessel. Let it cool. Then add the seasoning.
4.Blend in the curd and garnish it with chopped coriander.
