Semiya Kesari

When I have surprise guests and I don't have any other sweet to serve, I always end up making Semiya kesari which is fast and requires less ghee and sugar compared to Rawa kesari.Try it out and relish it.

Semiya- 1cup
Water-1 cup
Ghee-2 Tablespoons
Food colour-orange/red/yellow a pinch

1.In a kadai, heat 2 table spoons of ghee, fry the cashews and keep it aside.
2.In the same ghee, saute the semiya until it changes colour.

3.Add one cup of water, crushed cardamom and the colouring agent.Simmer and wait until the semiya is soft.

4.Add the sugar and stir until the sugar dissolves.

5.After the sugar dissolves, simmer and stir. After a minute or two you can see that kesari doesn't stick to the vessel.Remove from fire and serve. If you cook for long after the sugar dissolves, semiya will be hard and difficult to chew.
6. Garnish with cashews and serve.
