Idli sambar

Ingredients
Tamarind water- 1 cup
Cooked Tuar dhal- 1/2 cup
Green chilly -slit into two -2
Drum stick or Radish- 1/2 cup
Tomato-1 small cut into pieces
Carrot-cut into small--1/2 cup
Onion-preferably small onions 1/2 cup(otherwise Big onion is also fine)
Hing powder
Mustard seeds
Turmeric powder- 1 teaspoon
salt to taste

Dry powder/Curry powder
channa dhal-kadalai paruppu-2 table spoons
Dhania-coriander seeds-1 table spoon
Red chilly-2
Curry leaves- few
Dry roast the above and make into a fine powder.



Procedure

1. I have used Drumsticks as the season has just started in chennai and also gives an excellent taste and aroma to the sambar. You can substitute with radish too.Keep the tamarind water and tuar dhal also ready.




2.In a kadai(I like to cook everything in the same vessel :-)) heat a teaspoon of oil, add mustard seeds, allow it to flutter and add hing powder.Then add green chillies, onion, curry leaves .Cook for few minutes and add the rest of the vegetables.

3.Cook for 5 minutes and then add tamarind water, required salt and turmeric.
4.Simmer it until the vegetables are tender.Then add the curry powder and tuar dhal.
5. Simmer it again until the required consistency is obtained.
You can serve this with Idli/Dosai/Kuzhipaniyaram also.You can see that I haven't used sambar powder and also you can substitute Tuar dhal with Masoor dhal or Moong dhal.
