Who doesn't say no to chaats...that too if it can be made at home..Papdis are easy to make and it stays crisp for a week or 10 days, if stored in air tight container. The same papdis can be used for variety of chaats like Aloo chat, Sev puri and Bhel puri. You can make the chutneys at home or you can buy ready made from markets. I would prefer home made chutneys as it really brings out the flavour.
The recipe is really easy if you prepare the papdis and chutneys the day before you plan to make.
Ingredients
For the papdi
Maida - 2 cups(heaped)
Butter/.Margerine - 1 Tablespoon
salt to taste
Carrom seeds(ajwain in hindi/omam in tamil) - 1 teaspoon
Procedure
1.Make a smooth dough of all the above ingredients by adding water little by little.
2. Rest the flour for half an hour
3. Then make a big lemon sized dough and roll it evenly to make a big chappathi.Shape doesn't matter now as we are going to cut it. It should be dusted with maida otherwise it will stick to the base.
4.Take a sharp edge lid and cut small small puris.
5.Prick the puris with a fork to avoid puffing up
6.Deep fry until they are golden brown. Store in air tight container.
Now for the Papdi chats
Ingredients
Papdis
Boiled potato - cut into cubes
Chopped onions, tomatoes, grated carrot
Fresh coriander leaves
Green chutney/Tamarind chutney
Chilli powder
Chat masala
Black salt
Sev(omapodi in tamil)
Well beaten curd
Dry powders
Chat masala
Black salt
Procedure
1. In a plate arrange the papdis. You can either break it or just leave it like that. I would prefer to break the papdis for kids.
2. Now we just have to layer all the ingredients one by one. First potatoes, onions and then whipped curd. Then add the chutneys, chopped tomatoes and grated carrots.
3. Before finishing the plate take a pinch of chaat masala and black salt and sprinkle on top. Then garnish it with Omapodi(Sev) and fresh coriander leaves.
