Ingredients
Curry leaves
Red chillies- 3-4
Pepper - 1 tablespoon
Urad dhal - 1-2 tablespoon
Sesame seeds - 1 tablespoon
salt to taste
Procedure
1. Wash and Dry the curry leaves by spreading on top of a white cloth or newspaper. It may take 6-8 hours easily. Just keep spreading in between. If you have good sunlight in your balcony you can dry the curry leaves for an hour.
2. In a pan, saute the red chillies, pepper, urad dhal and sesame seeds (preferably in the same order).
3. In the same pan add the curry leaves(just in case if there is any moisture left, we can remove that at this stage)
4. Let it cook and make a fine powder by adding salt. This can be refrigerated for 3-4 weeks. Mix it with rice(you can season it with peanuts, channa dhal and mustard while making variety rice) and serve it with raitha/More kuzhambu or avial.
