Mixed vegetable curry



This recipe may seem a little time consuming. But with microwave occupying almost all the household, this is going to be fast and tasty too. Just use your own imagination while cutting as it makes a lot of difference and make sure all the pieces are more or less the same size. The more evenly you cut more evenly they cook. Also I tried to use only channa masala as I wanted the recipe to be a little bland. If you want to make this a little spicy, add red chilly powder. Add fresh cream if you want this recipe to be more tasty.



Ingredients


Mixed vegetables- Beans, Carrot, Potato, Capsicum
Paneer-cut into cubes
Onion-2
Ginger-1/2 an inch
(Take one onion and the ginger and make a paste)
Green chillies-2-3
Tomato-1
3 Tablespoon Oil for cooking
Salt to taste


Dry masalas
Chole masala -2 Tablespoons
Turmeric-1 Tablespoon
Procedure


First and the time consuming part is going to be cutting the vegetables.
1.Cut the onions into four equal parts with top and bottom cut neatly. Then open the onions like lotus petals.
2.Slice the tomatoes into thin strips.
3.Slit the mouth of the green chillies.
4.Capsicum to be cut into cubes and beans crosswise.
5.I chose to cut the carrots like a half-moon.
6.Dice the potatoes into thin long strips after removing the skin.
7.Make a paste with the ginger and the left over onion.
This will make your recipe look exotic.
Once all these are ready we are going to prepare this dish in a jiffy.


1.In a microwave bowl take carrots, potatoes and beans and microwave these for 5 minutes with required salt. Cooking time may differ according to the amount of vegetables you take. So first cook for 3 minutes, toss it once check how much more time is needed. Make sure the vegetables are not overcooked.


2.Now starts the parallel cooking. While the vegetables are cooking in the microwave, in a kadai heat oil. Wait till you see the smoke from oil. Now add the lotus shaped onions and capsicum. Cook until they are transparent. This should not take more than a minute.
2.Keep this aside in a plate.


3.In the same kadai add  2 tablespoons of oil. Fry the green chillies first and the onion/ginger paste.Simmer and cook until the raw smell goes.
4.Now add the tomatoes. No need to add water at this stage. Add the channa masala, salt and turmeric. Let the masalas simmer in the tomatoes and onion paste.
5.Simmer it for 4-5 minutes. You can see the tomatoes are cooked.
6. Meantime let us check our vegetables in the microwave..Ah it's done. Microwave cooking has this advantage of vegetables retaining the nutrients and colour.
7.Now add the vegetables to the kadai. Just add a small cup of water.Simmer and relax for 5-6 minutes.
8. With the vegetables and masala blending together, add the paneer cubes, onion and capsicum.Just mix and remove from fire. No need to cook at this stage.
7.Serve hot with Parathas/ Rotis and it also goes well with Peas pulao.
