Vegetable Briyani-Simple method

Making Authentic Briyani needs lot of patience and preparation itself consumes lot of our time.With my friend Anuradha's help, I tried to make this simple dish and the result was really delicious.Kids loved it.

Ingredients

Vegetables- beans,onion,carrot,peas,tomato
Mint leaves-a hand ful
Chilly powder-1 teaspoon
Coriander powder- 2 tablespoons
Gingergarlic paste-1 teaspoon
Cloves, Anise, Cardamom, Cinnamon- 2 each
Basmati Rice-2 cups(soaked in water for half an hour)
Water-4 cups
Oil-4-5 Tablespoons(you can use a mix of oil and ghee)
Cashews and mint for garnishing



Procedure
1.In a pressure pan heat oil.Add all the spices.Once it's fried add onion.Cook till it turns golden brown.
2.Add  ginger garlic paste and little mint leaves(keep the rest for garnishing) and cook for 2-3 minutes.


3.Add all the vegetables and chilly powder and dhania powder.Simmer and cook for 5 minutes.
4.Drain the water from the rice and add it to the half cooked vegetables.Simmer and cook for 2 minutes with constant stirring.

5.Add 4 cups of water(for 2 cups of basmati rice), add required salt and close the pan/cooker and switch off the stove after 2 whistles.If you are cooking more than 2 cups of rice 1 whistle is enough.


6.Once the pressure cools down transfer it to a serving bowl.Remember, don't stir/mix the rice when it's hot.Garnish it with fried cashews and mint.Serve it with onion-cucumber raitha.

    I tried this semiya kesari and it turned out yummy!

    I had tried this one previously also but i didnt get it properly. It became too hard to eat.


    This time, i followed the exact steps mentioned in your blog and it turned out very fine.
