Cocoa Burfi



Ingredients
Milk powder - 4 cups
Cocoa - 1 cup
Sugar - 3 cups
Water - 1 cup
Unsalted butter - 4 tablespoons


Procedure
1. Mix milk powder and cocoa. Sieve it 2-3 times to avoid lumps. Keep it aside.


2. In a wide mouthed pan add the sugar and water. Allow it boil.  We want one string consistency for this recipe.
Add a little milk to remove the dirt in the sugar. Dirt will come out easily after adding milk and you can scoop it out using a ladle.

Keep a cup of ice water. When it starts boiling, touch the syrup with  your index finger and thumb. Then slowly take your index finger away from the thumb. Initially the syrup will just melt away.Then slowly you can see a single thread forming. At that stage switch off the stove.

Don't wait for too long.Just check every 30-40 seconds. As it's only 3 cups of sugar it will take long time.




3. Once you get the one string consistency, switch off the stove. Add the butter. Let it melt in sugar syrup. You can see a creamy consistency.

4. Now add the milk powder/cocoa mixture. Stir well. The sugar syrup will absorb the milk powder/cocoa mixture. Immediately transfer it to a buttered plate.


5. Press using a flat based cup/plate. Wait for 2-3 hours to cut into pieces.
